Giant Turkey Meatball Parmesan

Meatloaf is one of the only dinners that my entire family will eat, and this is such a fun take on a traditional recipe! It’s simple and quick to prepare, kid-friendly, and a delicious hit with everyone at the table! I serve this with a roasted veggie side. For my pickiest little man who won’t touch veggies, I offer a side of pasta and add a little of my sneaky greens powder to the sauce!
INGREDIENTS:
- 1 lb 93% lean ground turkey
- 1/3 cup plain or seasoned breadcrumbs (Can substitute gluten-free breadcrumbs or oats)
- 3 tbsp grated pecorino romano cheese
- 1 large egg
- 1 clove crushed garlic
- 2 tsp tomato paste
- 1 tbsp fresh minced parsley
- 1/2 teaspoon kosher salt
- 1/3 cup marinara sauce
- 1 oz (1/4 cup) shredded mozzarella cheese
- grated parmesan, optional for topping
DIRECTIONS:
- Preheat the oven to 350°F.
- In a medium bowl combine turkey, breadcrumbs, pecorino, egg, garlic, tomato paste*, parsley and salt and gently mix to combine. Form into an oval loaf using your hands, slightly flattened at the top on a nonstick baking sheet. Bake uncovered 50 to 55 minutes, or until it’s cooked in the center and the internal temperature of 160 °F with a thermometer. Remove from oven, top with marinara and cheese and bake 3 to 5 minutes until the sauce is hot and the cheese is melted.
- Slice in 8 equal pieces. Serve with more warmed sauce on the side if desired.
*Tomato Paste Tip! If you buy your tomato pasta in the can, but you only need a tiny bit, portion out the rest into 1 Tbsp amounts (I use snack sized baggies), put into a freezer safe zipper bag, and freeze! You can then thaw and use as needed in the future!
